Years ago I used to try to eat black folks cooking while working in Mississippi and Louisiana. All vegetables were greasy with hog fat and cooked into mush. And served with a bottle of hot sauce... lol

And by your comments I can tell you have never been involved with making collards for a crowd or fundraiser when any large vessel that can hold water is used to wash quantities of greens be it a wash tub, livestock tub, bathtub and in some cases a washing machine!

Is this a recipe or a word salad?
