Slice the zucchini lengthwise.....make slits crossway....cover with melted butter.....little salt....little pepper....bake for about 20 minutes.....delicious!!! Works with yellow squash too.

Hello, I read this recipe about zuchinni in the Raleigh paper while visiting my sister this summer.
Ingredients: Large trench coat, dark sunglasses, fast car, 1 bushel of freshly picked zucchini squash. Directions: Put on the trench coat and dark sunglasses, come to think of it a hat is not a bad idea either, drive around a crowded parking lot until you spot a car that is not locked. Quickly place the bushel of zucchini squash in the back seat. Quietly shut the door and take off as fast as you can.

Cut up and fry in an iron skillet just as you would yellow squash!

Cut up zuchinni, yellow squash and onions. Maridate in lemon juice, olive oil and dill. Stirfry or grill(in a foil packet)

I found this recipe where all you do is slice up the zucinni(sp) and onions, place in a frying pan, pour some Italian dressing on them, cook on low-med until done, then put shake some parmesian(Sp) cheese on top - very good and easy.

Do you have a black, cast iron skillet or frying pan? When I fix stir-fry, I use a cast iron frying pan and just simmer the veggies and throw them on some rice. Last week, the grocery store didnt have any carrots or squash that looked good, so I just did zucchinni (sp) and it was delicious.

What is the best way to fix zuchinni? I am sure I have spelled to this wrong, but ya'll know what I mean.
