I love this recipe in the Summer.

Zucchini Relish
3 cups grated zucchini
1/3 cup bell pepper-chopped fine
1/3 cup fresh onion- chopped fine
1/4 cup fresh lemon juice
3 tablespoons vegetable oil
1 teaspoon salt
1/2 teaspoon white sugar
In a medium bowl, mix together grated zucchini, onion,pepper, lemon juice, oil, salt, and sugar. Pack into a jar or resealable container and refrigerate overnight before serving
