I have to make a ton of these at Christmas...

1 1/2 cup canola oil (only canola)

1-3 tablespoons red pepper flakes

1 envelope dry ranch dressing mix

1 box saltine crackers (regular or wheat)

1 tablespoon Homemade Gourmet Mock Spinach dip (dill dip seasoning)

1 tablespoon Mrs. Dash Extra Spicy Seasoning

2 gallon Ziplock bag

Wax paper

Cayenne pepper

Mix seasonings (except cayene pepper) and oil together. Put crackers in Ziplock bag and pour oil mixture over bag. Seal; turn bag to coat crackers. I usually turn about every 5-10 minutes or so until all the oil looks like it's absorbed...for about 15 minutes. Pour crackers onto waxed paper when the majority of the oil has been absorbed onto crackers. Spread crackers out and sprinkle with cayenne pepper to taste.

If you don't like this spicy - back down on red pepper flakes or leave out the Mrs. Dash & cayenne completely. These are very easy to season to everyone's taste. The people in my office like them extra spicy so I pile the hot stuff on...other's don't like them that hot so I back off. Trick is to make sure all the oil is absorbed before the cracker out onto the waxed paper.

I made these tonight. I used 3 sleeves of crackers. 1/2 cup of canola oil, ranch dressing mix and 2 tsp crushed red pepper flakes. Everyone loved them.

Cajun Fire Crackers
1 box of Saltine Crackers - (4 sleeves)
1/3 cup of Canola oil (may need a bit more)
1 Tbsp Red Pepper Flakes
1 Tbsp Cayenne Pepper
1 Packet dry ranch Dressing mix
1 2.5 gallon Zip Lock Bag
In the Ziploc bag add all of the ingredients except for the
crackers.
Close up the ZipLoc Bag and mix ingredients well by shaking the bag.
Add all 4 sleeves of Saltine Crackers and close the bag.
Turn the bag over several times to coat crackers with the chile and
oil mixture.
Let the bag rest for a couple of hours, turning the bag every 15
minutes or so.
If you can wait til the next day, they are even better. This is one
you can make ahead of your party and it will keep really well
