2 easy cube steak recipes.

Dip your cube steaks in egg, then coat in flour. Add pepper to taste. Brown in a bit of olive oil and some chopped onions. Cover with 1 can cream of mushroom and 1/3 c water and 2/3 c milk. Allow to simmer on a low heat setting for awhile. The gravy will cook down and form. Turn the meat every so often and stir the gravy. When the meat is cooked through it will be tender! You can serve it on a bed of rice or egg noodles.

Or

Brown the cube steaks in a bit of olive oil. Salt and pepper. Add 1 jar of either diced or crushed tomatoes, some cut up celery, and chopped onions. Simmer on low heat setting until the celery cooks through. Adjust seasoning to taste. When meat is cooked through, it will be tender. I love to serve this with baked potatoes. The tomato/celery mixture tastes wonderful as a baked potato topping.

The key to cube steak is to cook slowly on a low heat setting and add lots of liquids!

I salt pepper and flour steak, brown in oil....move steak pieces to paper towel
let oil and meat drippings cool a bit....this sort of sinks the drippings to the bottom of pan, drain all oil except about a tablespoon leaving meat drippings. Using more flour, about 1/2 cup, brown flour in meat drippings and remaining oil till desired shade of brown. Now, slowly add water making a gravy...about a cup this time....turn heat low....let it start to simmer, add meat pieces and another cup of water....if your gravy seems to be a bit thick add 1/2 cup water, set to low heat, cover and let it simma down as they say.

It's never failed me yet, country fried steak smothered in gravy all in one pan....mmmm good!!!

I beat the daylights out of mine, bread it with with flour, salt and pepper and brown it on both sides in oil. Then I put it in a casserole dish and add about a cup of water (more or less depending on how much steak you are making) cover the dish and bake it in the oven on 325 degrees for about an hour. The water steams the steak and the cooking time makes it as tender as your mother-in-law's love. You can cut it with a fork. Meanwhile, I make gravy in the pan where I fried the steak. It is ALL yummy.
