Buffalo Wings {Kansas City Style}
Ingredients
5 lb Wings,tips removed and separated at the joint
3 Large cloves of garlic
2 cups Red wine vinegar
1/2 cup Orange juice
3/4 ts Salt
2 Jalapeno peppers seeded and diced
1/2 tbs Pepper
2 cups Salad oil
For the marinade combine all, but the oil in the blender.
with motor running on low add oil slowly
If you dont do this slowly the oil will separate later.
put the wings in a gallon size freezer zip lock bag and add marinade.
let set overnight.
Recipe for the dry rub I use on all meat I BBQ.
This recipe fills and old seasoned salt shaker.
If thats too much cut in half.
6 Tbsp Chili powder
4 Tbsp ground ***in
1 tbs. cayenne pepper
mix well and pour into shaker.
Drain wings and place on awire rack in a large jelly roll pan.
mine hold 4-5 lbs. packed tight. sprinkle with the dry rub liberally.
Bake in a pre-heated 425 degree oven for 15-25 minutes.
depending on how big the wings are..remove from oven and drain.
I put another cookie sheet over the first one to hold the wings
in place and pour off all the juices.
Now for the sauce...
This is a doozie and worth all the effort so dont give up on me now.
2 Cups chicken broth..canned is fine
1/2 cup honey
1 5oz bottle hot sauce
1 tsp cayenne pepper
1 tbs corn starch
1 cup water
Place broth, honey, hot sauce, and cayenne in a saucepan and bring to a boil..
Reduce by 1/3..
Mix cornstarch with water, and add to the boiling sauce,
lower temp. a little and cook till it is thick enough to coat a spoon 10-15 min usually.
Now when you are ready to serve all this up preheat the broiler or your grill
I usually do mine in the oven since I leave mine on the cookie sheet.
Brush the wings with the sauce and put under the broiler till hot and crispy.
they will almost char a little on the tips from the honey.
Heat the remaining sauce and serve with the wings as a dip.
Serve with garlic bread for dipping.

Buffalo Drumsticks
INGREDIENTS
12 chicken drumsticks
1 (5 ounce) bottle hot red pepper sauce
1/4 cup butter, cubed
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
salt and pepper to taste
1 1/2 cups blue cheese salad dressing
DIRECTIONS
Place the drumsticks in a slow cooker, and sprinkle evenly with pieces of butter. Pour the hot sauce over the chicken, then season with garlic powder, onion powder, salt and pepper. Cover, and cook on High for 3 hours, or until tender. Serve chicken legs with blue cheese dressing on the side.

Sweet & Sour Chicken Wings
Ingredients:
3 lbs, chicken wings
1 cup cornstarch & flour (I usually double this)
2 eggs well beaten
Vegetable oil - for frying
Sauce
3/4 cup sugar
1/4 cup water
1 tbsp. soy sauce
1/2 cup white vinegar
2 tbsp. ketchup
dash salt

Directions:
1: Beat sauce ingredients until the sugar melts.
Cut wings into pieces and sprinkle with garlic salt
let stand one hour.
Dip into egg, then cornstarch-flour mixture.
Fry to golden brown, drain on paper towels.
Arrange pieces in a baking dish (9x13).
Pour "Sauce" over chicken pieces and
bake at 350 degrees for 40 minutes,
turning the pieces every 10 minutes.
You can use as much of the chicken and sauce as you want.
The trick is really in the turning over of each piece every 10 minutes
