Last night it was homemade enchiladas - Ohhh so good! Tonight will be leftovers! The poor fridge is groaning with the last two nights of food!! I swear this thread has me cooking again! It is a good thing!

I usually try to put up a some to last me all year and am down to 3 pks in the freezer so I sure am glad to see them moving up. Within the next week they should start up the creeks here, already are at Norman and HR. Gotta gettem while you can.

Stress, about the only thing I would ever trade a crappie for might be a lobster. I would rather have crappie than any other fish out there. I am not catching enough to trade right now, but will a little later on.

Tonight it's comfort food...mac & cheese, ***in chicken & rice, pinto's, cabbage and cornbread. Not sure how comfortable this meal will be come tomorrow...between the cabbage and pinto's...I'd call it the gas platter....shooooe!!!!

Having an Irish menu here at the big house myself. Corned beef brisket is in the crock-pot, potatoes are peeled for colcanon, collards are washed and ready for the pot (hey, I'm from the SOUTH of Ireland, no cabbage for me) and the dough for the soda bread is in the bowl rising.
