What to do with cucumbers

I like it but my family do not care for gyros.

My recipe for Tzatziki (gyro cucumber dressing) is as follows:

Ingredients:

1-5 to 6 oz Greek Yogurt (or probiotic plain yogurt, if absolutely necessary)
3/4 cup fresh cucumbers
1 tbsp fresh squeezed lemon juice or 4 tsps apple cider vinegar
1 tsp fine sea salt
1 tsp finely minced large garlic clove
1 tbsp good, virgin olive oil
1/2 to 1 tsp finely chopped fresh dill weed
1/2 to 1 tsp finely chopped fresh oregano (or 1/2 minced, dried oregano)

Directions:

Cut fresh peeled cucumber in half, long says and scrape out seeds. Don't worry about the fine or immature seeds.
Grate the cucumber and squeeze all the water from the grated flesh
Place in collander and salt it well. Leave draining for 30 minutes
Mix all ingredients, store in refrigerator until ready to use.

Chill well. You can prepare this as much as a day ahead

(I like to add 1 tbsp finely crumbled feta cheese and a tbsp finely chopped Kalamatha olives but some just don't care for either. This, to me, gives it a more authentic Greek taste)

Cucumbers are a great addition to chicken salad, tuna salad, cottage cheese, salad dressing, can be stuffed and baked, can be stuffed with a mixture of cream cheese, finely grated carrot, celery, chives, and bacon, mixed with sliced onion, tomato, feta cheese, English walnuts or pecans, can be juiced, added to coleslaw, potato salad, broccoli salad, 7 layer salad, pea salad,ad infinitum.

Great to ad as sides to Mexican, Thai, Chinese, Japanese foods. Can be cored and stuffed with pimiento cheese or sharp cheese spread.

Bread and butter pickles

freezer pickles

dill pickles...

all kinds of pickles.

and they are easy to prepare too!

I have a bunch of cucumber plants growing outside. Soon it will be blooming like crazy and looking for different things to do with cucumbers and some really good recipes if possible. Thank you!
