Here's my faves...
Sausage & Potato Soup 8 oz. reduced fat sausage1 lg onion16 oz frozen hash browns2 cups water1 can fat free chicken broth2 cups skim milk1 can Healthy Request celery soup1 can Healthy Request cream of mushroom soupBrown sausage & onion well (do not have to drain). Put in soup pot and add water, chicken broth and hash browns. Bring to a boil and simmer for 30 minutes. Add milk, cream of celery and cream of mushroom soup. Cook until heated through. Makes 11 cups at 2 points per cup. (Try with Cornbread Muffins (1 point)) Cornbread Muffins1 cup self rising corn meal2 Tbsp lite mayonnaise½ cup fat free buttermilk You may need to add a little water to get the right consistency. Pour into muffin tins (makes 8 muffins at 1 point ea.) Bake at 450 until golden brown.Chocolate Kashi MuffinsMix together:2 ¼ cups Kashi Good Friends Cereal1 cup skim milk5 packets Sweet N Low or Splenda¼ cup sugar¼ cup egg substitute½ cup unsweetened applesauce¾ cup pumpkin2 tsp vanilladash saltMix in second bowl:¾ cup whole wheat flour2 tsp baking powder1 tsp baking soda1/3 cup baking cocoa3 Tbsp mini chocolate chipsMix second bowl into first. Do not over stir. Spray muffin tin with nonstick cooking spray. Fill each cup evenly (will almost fill to the top) Bake 20 minutes at 350. These muffins are great warmed in the microwave for 10 seconds or use a dollop of fat free cool whip. Makes 12 muffins at 1 point ea. Freeze if you do not intend to use them all in a few days.

Thanks Bushman for the Lo-Cal Peanut Butter cookie recipe - gonna try it tonight. I absolutely love peanut butter cookies but have to watch my carbs & sugar.

LO-CAL PEANUT BUTTER COOKIE 1 1/3 CUP SPLENDA 1 CUP PEANUT BUTTER 1 EGG 1 TPS VANILLA FLAVORING MIX ,MAKE INTO BALLS SIZE OF WALNUTS FLATTEN WITH HANDS,MAKE FORK MARKS WITH SUGARED FORK BAKE AT 350º FOR 12 MINUTES
