WANT RECIPE FOR MEXICAN CORN BREAD

I use jiffy cornbread mix, a can of diced green chiles, a 1/2 can of corn, and some shredded cheese. Make the jiffy as directed on the box and add the other ingredients and bake. They are so yummy! :)

Bushman..is this an actual dish for a meal or a side? Sounds very interesting. All I can see me doing is cutting this in half, giving the other to the Wench, and loading my face with it. I'll give it a try. Thanks

the quickest easiest way is to goto Lowes Supermarket were the cornmeal is and there are packets of mexican cornbread mix back there, you just add milk.

Mexican Cornbread 1# hamburger ( I use ground chicken too) 1 pack taco seasoning for meat (optinal) 1 box jiffy cornbread mix (or make your own) 1 cup salsa 1 onion (chopped) 1cup chedder cheese shredded Green or (and) Hot pepper if you like it ,chopped fine Brown burger ,drain add taco seasoning, Put in 12 inch cast iron skillet or glass dish. Add salsa ,peppers onions and half of cheese.(in layers) make cornbread mix per box directions pour over other ingredents. Cover with other half cheese and bake till done. Use box directions for baking Serve with Jalapeno rings on the side.

Below is the recipe that we always use and it is very good!!
* 1 cup yellow cornmeal * 1/2 teaspoon salt * 1/2 teaspoon baking soda * 1/3 cup melted shortening * 1 cup sour cream * 1 small can (8 ounces) cream-style corn * 2 eggs, beaten * 1 cup shredded Cheddar cheese or Mexican blend of cheeses * 1 can (4 ounces) chopped green chile peppers, drained
Heat oven to 375°. Grease an 8- or 9-inch skillet; place over medium heat while preparing cornbread batter. Combine cornmeal, salt, and baking soda; blend well. Stir in melted shortening; add sour cream, corn, and eggs, blending well. Spoon half of the batter into the greased hot skillet. Sprinkle batter with the cheese and chile peppers; cover with remaining batter. Bake Mexican Cornbread at 375° for 35 to 40 minutes, until nicely browned.
