Here is a web site that has hundreds and hundreds of vegan and vegetarian meals. Lots of these sound really good. Look them over and see what you think.

Vegetable Loaf

4 Tbsp butter

1 medium eggplant peeled and diced

1 cup celery diced

1 medium onion chopped

1 tomato diced

1egg

1/2 cup dried seasoned bread crumbs

1/2 tsp oregano

1 Tbsp wheat germ

1 Tbsp garlic powder

salt and pepper to taste

1/3 cup bread crumbs

Preheat oven to 350. Add eggplant, celery, onion and tomato in frying pan with melted butter and saute. Remove to bowl and let cool. Add egg, 1/2 cup bread crumbs and seasonings. Place in buttered casserole and sprinkle with 1/3 cup bread crumbs. Bake 25 minutes.

Have you ever tried a vegetarian "meatloaf"? I was looking through a cookbook my daughter has and saw a vegetarian loaf. I plan on trying it as soon as I remember to copy down the recipe. If you would like it I will post it on here too.

Here are a couple that we do on the grill.

Cut solid wedges of cabbage (one wedge per person) and rinse it but do not tear it apart. Wrap in a triple piece of aluminum foil, place on grill for about 30 minutes while cooking other goodies. Delicious!

Scrape, split, and cut in 2 to 3 inch lengths, 4 carrots, 2 small zucchini or squash, and quarter a medium Vidalia or sweet onion. Add 2 tbsp Schezwan (sp) and 1 tbsp water to the vegetables. Double wrap in foil and place on top rack of grill. About 20 or so minutes will make them just right. Cook a little longer if you like them softer.

4 carrots, scraped, split, and cut in 2 to 3 inch pieces. Don't drain. Place on double foil
and add a tbsp butter or margarine along with 2 tbsp orange juice and 1 tbsp good honey. Place on grill for about 20 minutes, top rack. Really good!

Wrap whole apples (core from top) and place butter or margarine, 1 tsp sugar and generous dash of either apple pie spice or ground cinnamon. Wrap the apples in individual packs. Grill on top rack or place in oven proof baking dish at 20 minutes. Really good!

sassy are you a true vegan....meaning not only no meat...but meat by products also...or are you just going meatless....LOLOLOLOL!!!!
