OMG, call the authorities. We've made someone eat something unhealthy. A little butter or bacon grease a few times a year is not going to be harmful to anyone. Most of us who come to the recipe section are adult enough to know to eat all foods in moderation.

that is exactly what the morbidly obese citizens of wilkes need. find a way to take one of the healthiest foods around and ruin it with a big greasy blob of bacon grease. my word, when will people learn to cook without ruining the taste and nutrition that the food provides when it doesn't have a bunch of unhealthy crap added to it.

oh so sorry crypt i did leave out the creassy greens., and whitehawk i am going to fix a chicken salad and turnips greens too, although i will have a hard time finding real buttermilk. whitehawk you have done flung a craving on me....LOL

I use 2 tbsp real butter and 2 tbsp canola oil, 2 tsp course sea salt. (Cut down on the salt if you don't have a big pot of greens. If the wife is not around I add 2 strips of bacon and omit the butter.) I also like to fry my creecy greens in a good, heavy cast iron skillet before serving. Of course it goes without saying that a side of vinegar, a glass of cold real buttermilk, and some cow butter for the mandatory corn bread is required.

had an older person to ask me how to cook turnip greens today....i cook them on med high for about an hour and a half, then season them with bacon grease. my mom fixes them with beef ribs....any kind of greens will build your blood overnight (i always get a headache when i eat too many) . how do you season yours?
