Be sure to bake breast down. Place a couple of unpeeled Granny Smith apples and an onion in the cavity. Rub the outside well with canola oil and a little "it's A Dilly" seasoning. If you like the taste of it then put a couple of branches of Rosemary in the cavity as well. Doesn't look like a Saturday Evening Post, Norman Rockwell picture; however, most restaurants bake this way.

Consider also the frozen turkey breasts that you bake while they are still frozen. Delicious. I wouldn't consider ever baking a whole turkey again. Dry, dry, dry. And, what about all that red meat that so many of us will not eat? All comes down to personal preference.

sounds sickening, but good... i slather mayonnaise with assorted herbs all over it and cook it in a bag. makes for a crunchy skin and a moist flesh
