Tuna Recipes

I use water packed light Chicken of the Sea tuna. Drain and squeeze all water from can (6-1/2 oz.).

Add one heaping Tbsp Dukes mayonnaise;

1/4 cup diced Mt Olive bread and butter pickles (drained);

1 tsp French's mustard; 1/4 cup red relish (Mt olive diced, sweed mixed pickles)-drained,
pinch salt and pepper to taste;

1/4 cup finely diced pimiento stufed olives {olives may be omitted}.

Some people like a little sweet onion in the tuna mix - play to your eaters likes and dislikes. I personally don't like the diced onions mixed in the tuna mixture;

Blend well with fork.

If you like a sweeter tuna then add 1 diced, boiled egg; 1 Tbsp diced English walnuts or diced pecans, 1/4 cup diced grapes.

Serve on toast or, even better, cut a whole tomato in 1/8 sections (but don't cut all the way through - that way, you can pull the tomato apart and put a scoop of tuna in the tomato.

I always like to serve the tomato/tuna diet dish with a scoop of cottage cheese to the side, a peach half or pear half with a little grated cheese on the pear and or peach.

A couple of melba rounds or garlic butter toasted french bread rounds go well with the tomato/tuna diet plate.

This was always a favorite of my men customers in my restaurants.



Add a sprinkle of chives or chopped scallions and chopped cucumber on the tuna/tomato. Really filling and delicious.
