my mom taught me this one,when we both we trying to shed a few pounds... drain 1 can of tuna,add a couple of spoons of pickle relish,diced onion,chop up some tomatoe,salt and pepper,and add a (little) low fat salad dressing..mix..and thar ya go...

the best chicken salad is made with the boneless skinless breasts - boil until they are nearly falling apart in water with salt and pepper. chop finely in a food chopper - add mayo, salt and pepper to taste - nothing else - everyone raves about it

I have a tuna ball receipe:
1 large can of solid white tuna (in water--not oil) 1 8oz package of creamcheese 1 package of Lipton Vegetable Soup Mix
Drain water off of tuna and put in a bowl, flake apart well mix in creamcheese thourghly, then mix in the soup mix. For best results refridgerate overnite. Spreads on bread best at room temperature. Does well on crackers, straight out of the fridge.

You boil your eggs, wait until they are cool OR you can put them in cold water after they are boiled, peel the shell, cut them up and use a dicer (I use the old fashioned handheld ones) to dice them up pretty finely, add mayo and salt and pepper to your liking. Mix it together and taste to see if you have enough mayo, etc. Then I dice up celery and onion very finely.... I mean diced VERY well. Stir that into it. Taste - add anything to your liking that you would like more of. It is WONDERFUL!!

Does anyone like egg salad? I absolutely love egg salad and if I must say so myself, my homemade egg salad is my favorite. Wonder if I could sell it like they sell pimento cheese and things like that at the grocery stores?

It doesn't get any easier than this: Put canned chicken in food processer and chop finely. We love the chicken from Sams, 5 big cans for $10. (Blue label with a check mark on it, can't remember the name) Mix in Helmans mayonaise to taste, black pepper, cubed sweet pickles, and finely chopped onions if you like them. Thats it,, all done! Enjoy!
