Carehare and Softball, in case you didn't see Tarheel pie posting earlier, I will post it here.
Quick and a real hit at our home!
1 Cup Chocolate Chips (real ones, such as Nestle's or Hershey's) 1 stick butter - melted 1 Cup Chopped Pecans 1 Tsp vanilla 1/2 Cup flour 1/2 Cup White Sugar 1/2 Cup Brown Sugar 2 eggs, beaten
Pour warm butter over chocolate chips. Stir well. Blend all remaining ingredients and stir into chocolate chip/butter mixture.
Pour into unbaked pie shell.
Bake in 350 degree oven (pre-heated) for 30 to 40 minutes. Top will crack somewhat. We use deep dish Pet Ritz pie crust for this pie.
Cool, add whipped cream or softened Cool Whip as desired.
Delicious!

Tarheel pie is a sort of crusty, gooey, brownie type chess pie. If you like the idea then I will post the recipe; however, must warn you: It is an habituating pie that you'll never tire of.

My Candied Yams!!!
About 4-6 Sweet Potatoes - it depends if you are making a lot or just a little and the size of your potatoes. Wash and boil them in water until just fork tender but not all the way through the potato - oh about half a fork length. Cool and use a knife to scrap the peelings off and any blemishes. Cut up in large chunks and place in pam sprayed baking dish. In a sauce pan - bring to a boil about 2 1/2 cups of water, 1 box of light brown sugar, 1 stick of margarine, about 1 tsp. of nutmeg, and about 1/2 tsp. cinnamon - I adjust to my particular taste. Pour hot liquid over sweet potatoes and bake at 350 until potatoes are fork tender and they have absorbed a lot of the liquid, they will turn darker - about an hour. Enjoy!!! :)

For me, it's pickled garlic brussel sprouts. For my sons: Tarheel Pie. For my wife: Buttermilk or Vinegar pie.
Of course, God created sugar and potatoes just for folks such as me. Fixed any way and every day suits me to a T.
