DRESSING
1 BAG CORNBREAD STUFFING
2 STALKS CELERY CHOPPED FINE
GIBLETS COOKED AND CHOPPED
1 ONION CHOPPED FINE
1/2 STICK BUTTER
CHICKEN BROTH
LRG CAN MUSHROOMS DRAINED
1 TPS PEPPER FLAKES if you like hot

SAUTE ONIONS,CELERY AND MUSHROOMS IN BUTTER
MIX STUFFING,SAUTED VEGGIES,BUTTER GIBLETS,SALT ,PEPPER
CHICKEN BROTH PUT IN A GREASED 9X13 GLASS DISH
BAKE AT 375 TILL GOLDEN BROWN .
SERVE WITH ROASTED TURKEY AND GRAVY

Giblet Turkey Gravy
INGREDIENTS
Turkey giblets
3 cups water
1/2 cup flour
METHOD
Take the giblets (neck, gizzard, heart, liver)
and rinse under cold water.
Place in a saucepan with 3 cups water.
Bring to a boil, cover and reduce
to a mild simmer. Simmer for one hour.
After an hour, turn off heat. Leave
covered until ready for use.
Make gravy in pan in which turkey was roasted.
Begin by skimming off fat,
being sure to save sediments and broth to be set aside.
Reserve 1/2 cup fat. Remove giblets from saucepan and discard.
Return reserved fat to roasting pan.
Measure drippings and enough broth from
giblets to make 6 cups and set aside.
Place roasting pan with fat over medium
heat and blend in flour, stirring
and cooking until bubbly.
Stirring all the while,
Add measured broth and drippings to mixture in
roasting pan and cook, stirring all the while, until thickened,.
Season to taste with salt and black pepper.
Pumpkin Roll with Cream Cheese & Pecans
Roll
3 Eggs
1 cup Sugar
2/3 cup Pumpkin
1 teaspoon Lemon juice
3/4 cup All-purpose flour
1 teaspoon Baking powder
2 teaspoons Cinnamon
1 teaspoon Ginger
1/2 teaspoon Nutmeg
1/2 teaspoon Salt
Filling
8 ounces Cream cheese -- softened
8 tablespoons Butter -- or margarine
2 cups Powdered sugar
1 teaspoon Vanilla
Frosting:
8 ounces Cream cheese - softened
1 cup chopped and lightly roasted Pecans
PREPARATION:
In large bowl, combine eggs and sugar, beating well.
Add pumpkin and lemon juice, mixing until blended.
In separate bowl, combine flour, baking powder, spices and salt.
Add to egg mixture, mixing well.
Spread batter into greased and waxed-paper lined 10-by-15-inch jelly-roll pan.
Bake at 350 ° for 15 minutes. Remove from oven.
Cool for 15 minutes.
Place cake on clean kitchen towel sprinkled liberally with powdered sugar.
Cool 10 minutes longer. From 10- inch side, roll cake up in towel. Set aside.
While cake is cooling in towel, prepare filling.
Beat together cream cheese and butter;
stir in powdered sugar and vanilla and blend until smooth.
Unroll cake. Evenly spread filling over cake.
Roll up cake (without the towel).
Spread Cream cheese over roll .
Gently sprinkle Pecans over roll till covered on sides and ends.
Wrap in plastic wrap.
Cover and chill at least 1 hour.
Slice before serving.
Keep leftover slices refrigerated.
This pumpkin roll freezes well.
Sweet Potato Pie
3 c. white sweet potato cooked and mashed
1c.sugar More or less to taste
Whole milk,enough to make creamy
1 tps vanilla flavoring
dash salt
Put in pie shell and bake at 350º for abuut 45 minutes
Till set in center of pie.
Pumpkin Pie
3 c. pumpkin cooked and mashed
1c. sugar
Whole milk,enough to make creamy
1 tps vanilla flavoring
1 large egg
allspice to taste
Put in pie shell and bake at 350º for about 45 minutes
Till set in center of pie.ill set in center of pie
Sausage Stuffing
2 lb. pork sausage
1 C. butter
1 chopped onion
1 stalk celery chopped
3 boxes stuffing mix
3 cans chicken broth
1 T. salt
1/2 t. pepper
1 T. poultry seasoning
2 T. chopped parsley
1 can mushrooms
2 t. sage
2 t. thyme
1 T. garlic powder
1 T. onion powder
2 t. basil
1 t. oregano
3 eggs
1 can evaporated milk

Brown and drain sausage.
Add remaining ingredients and stir gently until
bread crumbs are moist.
Bake 1 hour at 350º.
For this size recipe I use a large roasting pan.
The throw away aluminum pans work great
Garlic Mashed Potatoes
2 (1 lb) large potatoes,
peeled, quartered
2 C skim milk
2 cloves garlic, large, chopped
1/2 tsp white pepper
To use saucepan:
1. Cook potatoes, covered, in small amount of boiling water for 20–25
minutes or until tender. Remove from heat. Drain and recover.
2. Meanwhile, in small saucepan over low heat, cook garlic in milk
until soft (about 30 minutes).
3. Add milk-garlic mixture and white pepper to potatoes. Beat with
electric mixer on low speed, or mash with potato masher, until smooth.
Old Timey Beans
3 pounds snap green beans
1/2 small ham hocks, (4" long)
1 small strip ham fat (if hock is lean)
4 cups water, to barely cover
1/2 teaspoon crushed dried red pepper
1 teaspoon salt
1/2 small onion
Place all ingredients in a pot and bring to a boil, uncovered, and cook for 15 to 20 minutes. Add the green snap beans, bring back to boil. Reduce heat to low and simmer for 3 hours, with the lid half on, or until the liquid has evaporated. Remove the ham hock and break up the ham into small pieces; add to beans.
Serves 6.

60 Minute Rolls
1 cup milk
1 cup water
1/4 cup butter
4-5 cups all purpose flour
3 T sugar
1 tsp salt
2 pkgs. yeast
Combine milk, water and butter in a saucepan. Heat over low heat until
liquid is very warm to the touch, about 120 degrees. In mixer bowl,
place 3 cups of the flour, along with the remaining dry ingredients.
Mix on low speed until well blended. Gradually add the warm milk
mixture. Mix until well blended. Gradually begin adding the remaining
1 to 2 cups of flour, until the dough is firm. Knead dough a few
times. Place in a large greased bowl and allow to rise in a warm
place for 20 minutes. Divide into rolls or loaves. Place bread in a
warm place and rise for another 30 minutes (I use my oven). Bake in a
425 F. degree oven for 10-12 minutes or until golden brown. Brush
with butter.

I am cooking Thanksgiving for the first time this year and need some good old fashioned meal ideas. M grandmother used to make the best mashed potatoes and gravy, baked mac and cheese, potatoe soup,turkey stuffed with dressing,etc. Can someone give me some meal ideas thats simple and delicious?
