Homemade Peanut butter balls that we call "Golf Balls" and Carrot Cake! Then I go down to mom's early and help fix mashed tators, beans, stuffing, rolls, and whatever else needs fixin'.

Ok, you guys asked for it. I'm tellin' you tho', if ya fix it, I guarantee you will be asked to fix it again and again...

Apple Pie Ham

1 1/2 cups apple juice
1/4 cup butter, cubed
1 6oz pkg pork stuffing mix
1 medium tart apple, finely chopped
1/4 cup chopped sweet onion
1/4 cup chopped celery
1/4 cup chopped walnuts
1 fully cooked spiral sliced ham (about 8 lbs)
1 can apple pie filling
1/4 teaspoon ground cinnamon

In a large saucepan, bring apple juice and butter to a boil. Remove from heat and stir in the stuffing mix, apple, onion, celery and walnuts. Place ham on a rack in a shallow roasting pan. Spoon stuffing by tablespoonfuls between ham slices. Spoon pie filling over ham, sprinkle with cinnamon. Bake, uncovered at 325 degrees for 1 1/4-1 13/4 hours or until a meat thermometer reads 140 degrees. ENJOY!

Corn Casserole

2 cans cream corn
2 cans whole kernel corn
1 box jiffy cornbread mix
1-8oz sour cream
1/2 stick melted butter/margarine

Mix all and bake in 13x9 casserole dish at 375 degrees for 45 minutes

Corn and Cheddar Casserole
INGREDIENTS:
2 eggs
1 can cream-style corn, (14 3/4-ounce)
1 pint sour cream
1 small box cornbread mix (approx. 8 ounces)
6 tablespoons melted butter
1 cup shredded Cheddar cheese
PREPARATION:
Grease a 9-inch square baking dish. Beat eggs in a mixing bowl.
Stir in cream-style corn and sour cream until well blended.
Add salt, cornbread mix and melted butter; mix well.
Stir in shredded cheese.
Pour casserole ingredients into prepared baking dish.
Bake in a 350° oven for 25 to 30 minutes, or until top is golden brown.

I'm in charge of EVERYTHING. Havin' Apple Pie Ham (spiral sliced ham with apple stuffing between slices and covered with apple pie filling), sweet tater casserole, home canned green beans, corn casserole, my mama's homemade mac n cheese, 2 pumpkin pies, one triple chocolate pie and one coconut cream pie. WHEW!
