I have always had problems with biscuits too, but found a recipe for Angel Biscuits years ago, and these are the best, and always turn out good.
1 (1/4-ounce) envelope active dry yeast 2 tablespoons warm water (105° to 115°) 5 cups all-purpose flour 1 tablespoon baking powder 1 teaspoon baking soda 1 teaspoon salt 1 cup shortening 2 cups buttermilk 3 tablespoons honey (optional)
Combine yeast and warm water in a 1-cup liquid measuring cup; let stand 5 minutes. Combine flour, baking powder, baking soda, and salt in a large bowl; cut in shortening with pastry blender until mixture is crumbly.
Combine yeast mixture, buttermilk, and add to dry ingredients, stirring just until dry ingredients are moistened.
Turn dough out onto a lightly floured surface, and knead 1 minute.
Roll dough to 1/2-inch thickness. Cut with a 2-inch round cutter, and place on ungreased baking sheets.
Bake at 400° for 10 minutes or until golden. Serve with Butter.
NOTE: You can store unbaked dough in the refrigerator in an airtight container up to 1 week.

Rawheeler, I buy it from Lowes, Food Lion, and Harris-Teeter. It comes in a 2 lb bag. If you have access to a wholesaler, you can buy it in 25 lb bags. It comes in a white with yellow and red markings. You may have to ask for it because some stores stock it in the specialty section rather than with the regular flours.
Autry brand is somewhat similar, but not as tasty.

Thank you so much Whitehawk!
Satie, i tried some frozen biscuits once. I swear they didn't get any bigger. Just looked like little hard white turds. LOL! I gave up and never tried any again. I will try Walmarts. Thank you!

Newme,
Most restaurants who have good biscuits use a product called Type L Biscuit Mix (Southern Flour Mills). Follow the receipe and use buttermilk as your liquid. I guarantee this biscuit will not fail. Have made hundreds of thousands of them. Perfect every time. Can be rolled out - easiest - just put on floured cutting board and use your hands to flatten dough to about 3/4". Use a biscuit cutter and place cut biscuits on a baking sheet which has been sprayed with pam.
You can add raisins and cinnamon with a little brown sugar and butter (after rolling out dough), then roll up and slice into pinwheel rolls. Makes a pretty good cinnamon roll or if enough sugar and butter makes a quick "sticky".
