Taters & Onions--tips

We love the Lipton Onion Soup Potatoes. I use the off brand onion soup mixes from Walmart or Save a Lot though. You peel and cube several potatoes..mix in 1/3 cup of olive oil and soup mix. Put in baking dish and bake at 400 for 35 minutes. Turn once to keep from sticking to pan.

If you want really great fried potatoes, take your day old baked potatoes and cube them with the skins still on and then fry them. They turn the pretties golden brown and are crisp to the outside. Add onions at the last minute just don't let them get too soggy.

I fix this for breakfast. After the potatoes and onions are done, I add eggs and stir. Put a couple of spoons full in a flour tortilla, add salsa and cheese. Roll and eat.

Oh and i usually let the oil get hot before i put the taters in.... you have to be careful and use a splatter sheild cause the oil tends to pop a bit when the wet hits it.

are you talking aobut fried taters with onions?

When you are fryin the taters, you have to use generous amounts of oil, and don't stir them too much or they do end up looking like mashed taters. Its better to use a spatula and flip em instead of stirring.

It doesn't take the onions as long to cook as it does the taters, unless you leave the onions in big chunks.

Let the potatoes get very brown before you turn them. Avoid "stirring" as much as possible. Keep them covered. Add onions about 5 min before the potatoes are finished cooking.

so my husband requested taters and onions one night for supper about a month ago. it was my first attempt--tasted great, just turned out more like mashed potatoes and onions lol so do you have any tips on cooking them to prevent them from losing their cube shape? maybe i should fry the taters first, then add the onions later? thanks!! (ps i'm gonna fix some more for him but i want them to actually look like the taters and onions he remembers from back in the day lol)
