This is a great version of potato soup!!
"Olive Garden Style" Zuppa Toscana Soup Ingredients1 1/2 C. spicy sausage (I prefer Jimmy Deans)2 medium potatoes, cut in half lengthwise, and then cut into 1/4" slices 3/4 C. onions, diced 6 slices bacon 1 1/2 tsp. minced garlic 2 C. kale leaves, but in half, then sliced 2 T. chicken base 1 qt. water 1/3 C. heavy whipping cream Methods/steps§ Brown sausage in heavy skillet and set aside.§ Place onions and bacon in a large pot and cook over medium heat until onions are almost clear. § Remove bacon and crumble. § Add garlic to the onions and cook an additional 1-minute. § Add chicken base, water, and potatoes, simmer 15 minutes. § Add crumbled bacon, sausage, kale and cream.§ Simmer 4 minutes and serve.

High Fiber Potato Soup (good for lowering cholesterol and tastes great too)
4 medium potatoes. (I use Idahos. Sliced thin.) 1 medium onion, diced 1/2" cubes. 2 large carrots, grated. 2 large celery ribs. Sliced across and about 1/3" wide.(Don't use the leaves.) 1 tsp salt (or to taste) 1 tsp black pepper (or to taste) 2 Tbsp smart start light margarine. Water to cover.
Cook uncovered until celery and onions are done. Stir frequently from bottom so milk will not scorch. Potatoes will still have their shape but will be soft.
1 13 oz can low sodium, low fat chicken broth (I use Lowe's brand-it's less expensive and has less sodium than Swanson's low sodium brand)
1-1/2 cup Lactaid milk (You can use regular milk. I use 2%) 1/2 cup filled evaporated milk or regular evaporated milk.
Cook on low for another 10 to 15 minutes. Stir frequently. Do not let boil.
Very good and it freezes well for a quick thaw and heat-up for later.
