Peanut Butter Tater Candy 1 medium white potato 1 package confectioners sugar 1/4 cup slated chopped peanuts (optional) 1/4 teaspoon vanilla extract 1/2 cup smooth peanut butter
Boil potato (with skin on) until done. Peel; remove any eyes or spots. In a mixing bowl, mash the potato thoroughly with a fork or electric mixer at slow speed. Add vanilla. Gradually add confectioners' sugar (use fork, as mixture begins to firm) until it forms a ball. Turn out on a confectioners' sugar covered surface (instead of flour). Roll the ball out flat and oblong until it is 1/4 inch thick. Spread the peanut butter evenly over the flat surface. Sprinkle the chopped peanuts evenly over peanut butter. Cut the flat surface in half the short way. Roll jelly roll fashion, sealing the edges. (2 rolls) Place in refrigerator until chilled and firm. Slice into 1/3 inch pieces. Keep refrigerated until ready to serve.

Natural -- I am missing something here .. I tried this recipe adding the powered sugar to the whipped potatoe and it almost liquified. No way can I cover with peanut butter , chill, and cut into pinwheels .. HELP ! !

OH MAN! I had forgotten about this stuff! My mama got her recipe out of our electric co-ops magazine back in the day and would treat us at Christmas and Thanksgiving with it! I remember the first time she made it she burned out her new electric mixer! THANKS FOR THE MEMORIES!!!!

EASY TATER CANDY
1 white potato, boiled 1 box powdered sugar Peanut butter
Whip potato until creamy. Mix with sugar. Pat or roll out on waxed paper. Cover layer with peanut butter. Roll up, chill and cut into pinwheels.
