Mexican Stew
* 1 cup diced onion * 1 -2 garlic clove, finely chopped * 1 tablespoon olive oil * 3 cups cooked chicken or 3 cups cooked turkey, diced or shredded * 1 (1 1/4 ounce) package taco seasoning mix * 2 (14 1/2 ounce) cans ready-cut diced tomatoes, undrained * 1 (15 ounce) can black beans or 1 (15 ounce) can kidney beans, drained * 1 (8 3/4 ounce) can whole kernel corn, drained * 1 (4 ounce) can diced green chilies, drained * 1 cup chicken broth * 1/2 tablespoon cornstarch
Prep Time: 10 mins Total Time: 30 mins
1 Cook onion and garlic in oil in large saucepan until tender. 2 Add cooked chicken, taco seasoning, tomatoes, beans, corn and chilies. 3. 3 Blend broth and cornstarch; add to saucepan. 4. 4 Bring to a boil; reduce heat and simmer 15 minutes; stirring occasionally. 5. 5 Serve with cornbread for a hearty meal.

When my sister for told me about Taco Soup, I thought "Yuk"......BUT it is TOO GOOD!!!!! Don't let the name run you away.

I make it, but don't have a recipe. It is pretty simple. In a large pot brown 1 lb hamburger meat and diced onion if onion is desired. After meat is browned, drain. Add back to pot and add one pack of Hidden Valley dry Ranch Dressing mix and one pack of taco seasong mix. Add one can diced tomatoes with green chiles (I use the hottest,) one can undrained corn, one can kidney beans rinsed. You can also add a can of rinsed black beans if you like. If this is not soupy enough for you or not enough tomato, add a can of regular diced tomatoes undrained. You can also add water if you want it more soupy. Heat until low boil and then simmer 10 minutes. Serve with tortilla chips, taco cheese blend, salsa and sour cream.
There is also a White Bean Chili that is similar to this and very simple. You buy the McCormick White Bean Chili packet at the store and brown some diced chicken in a pot. Add a can of white beans and whatever amount of water it says on the packet and cook ten minutes. I use canned chicken so it is even faster and cheaper. This is good served with the above condiments also, except I serve with oyster crackers instead of tortilla chips. If you want to make it an even bigger and heartier meal to serve more people you can also when cooking, add diced tomatoes with green chiles and a can of corn.
