After peeling the potatoes, I slice them on a metal grater, to where they are wafer then. I cook them in vegetable oil. I add about a cup of granulated sugar when I first start cooking them. If you don't put a lid on them, make sure you check them often, stirring every few minutes.

Here is a different one for you. I got tired of all the "sweet" sweet potato recipes, so I made a different one. I cut them into french fry type shapes, then toss them with a little olive oil, paprika, garlic, salt, whatever else you want. Then roast them. They do not really get crunchy like french fries, but the combination of garlic and sweet is awesome!

Take a cup of sugar or splenda and about 1/4 a cup of water and put it in a frying pan with sweet potato slices and fry them, make sure and put the lid on untill they are done and then dry them out with the lid off. This makes for a great desert, you can also use apples or pears the same way.

Anyone have any good recipes for sweet potatoes? I know there is one about sweet potato casserole, by Mr. GoWilkes himself, but anyone have anything else to do with sweet potatoes? Thanks!! :)
