Here's the way I make mine for my son:

Peel and slice a sweet potato. Put in a large glass bowl covered w/ clear wrap {clear wrap is a must}. Microwave for 15 minutes. Mash, add butter, cinnamon and sugar. Mix well. Pour marshmellows on top, microwave for 1 minute, stir and serve.

This is going to sound bad, but I've started buying the Bob Evans microwavable kind (Food Lion carries them). Add a bit of brown sugar, and they're better than any that I've made. And even with the brown sugar, they're better for you than regular potatoes.
