Southern Poppers 6 Jalapeno peppers 1 bag of shredded hashbrown potatoes 1 lb. of Pepper-jack cheese 4 tbsp. of flour Melt cheese and mix with hash browns. Then finely dice peppers and mix into the cheese and hash browns. Add flour to the mixture to hold it together. Spoon into frying pan as you would if you were frying hush puppies or crab cakes. Usually takes about 1 minute each side until brown. Serve with your favorite accompaniment such as ranch dressing or spicy mustard.

Glazed Sausage Bites 1 pound bulk pork sausage 1 egg, slightly beaten 1/2 cup fine cracker crumbs 1/3 cup milk 1/2 teaspoon ground sage 1/8 teaspoon ground thyme 1/2 cup water 1/4 cup ketchup 2 tablespoons packed brown sugar 1 tablespoon vinegar 1 tablespoon soy sauce PREPARATION: In a bowl, combine sausage, egg, crumbs, 1/3 cup milk, and ground sage and thyme. Beat with electric mixer at high speed for 5 minutes. Shape into about 3 dozen small balls (about 1 1/4-inch diameter). The mixture is soft, so keep hands wet to make shaping easier. In a large skillet, in batches if necessary, brown the sausage balls slowly on all sides, about 12 minutes. Pour off excess fat. Combine remaining ingredients and pour over the sausage bites. Cover and simmer for 15 minutes, stirring occasionally. Makes about 3 dozen sausage bites.

Awesome dip:
Brown 1 lb. sausage (if you like it hot, use the spicy sausage) Drain the sausage and rinse it in hot water in a colander. Place in crock pot at lowest setting Add 1 package cream cheese and 1 can of rotelle tomatoes (drained) heat thoroughly. It doesn't sound good but it is!!!
This kind of a spin of what my mom makes. Instead of the cream cheese, she throws in a block of velveeta cheddar cheese, and half a block of velveeta jalapeno cheese! Mm it's so good.. I'll have to try it with the cream cheese.

1st , you were talking about using butter I have used it when serving to people that can't stand the heat .The folks I eat wings with are a bunch of pepper heads .It's a competition to see who can make a more flavorfull and hotter wing.Sometimes they will honestly take your breath when they are set on the table.but the're great. I have a recipe i'll post for some HOT wings.

For my personal taste I make mine with Tabasco sauce because it's hotter and add Tesas Pete Hotter than Hot sauce for the cayenne flavor . I like wings that when you eat them you need a damp washcloth to wipe sweat . MMM MMM GOOOD I boil mine down to 1/2 of the original quantity And it gets good ,concentrated and HOT. Then have garlic bread for dipping and LIME jello for dessert

Hey Bushman, your recipe for Buffalo Wings is very similar to the one I make. I also add a stick of melted butter (yes, I'm a Paula Deen fan!), and use the new Texas Pete HOTTER hot sauce! Eat 'em and sweat!!!
