Stuffed French Toast

Haven't used this exact recipe but have made stuffed french toast a couple of ways. I took cream cheese and mixed with crushed pineapple (drained) and used that to stuff the french toast. I make homemade sourdough bread and usually use that for the bread. You can also use texas toast and split the slices almost to the edge so it opens sort of like a book and put the filling in between. put the filling in, soak it in the egg mixture and make as usual. You can also bake this instead of frying it.

The other way I made this is using various jams. I have used apple butter, cinnamon apple butter, strawberry and blueberry jams. They were really good too. Hope this helps. I made breakfast casserole for this morning but now I wish I had made french toast.

In new issue of Good Housekeeping on page 146 ,interesting recipe using peanut butter and banana for stuffing. Haven't tried it yet , think kids will love it. In pie plate beat 2 LG. eggs with 1/2 C milk. Spread 1/2 C peanut butter on 8 slices of bread. Diagonally slice 1 banana and arrange on 4 slices of bread;top w/ remaining bread to make 4 sandwiches. dip in egg mixture. Fry in butter for 6 minutes. Drizzle w/ syrup. Makes 4 servings.
