One can buy cheaper cuts of meat and marinate in beer, wine, or a strong cola like Dr Pepper and then cook as you like. You can still have affordable cuts of meat for a family if money is tight.

I have a little bit different of a approach.... (although "bushman" had a great suggestion), I "sear" my steaks, meaning I heat the pan and the oil to high, and the burner is red, I only cook them for 60 seconds to 1 and 1/2 minutes on each side. This leaves the meat (depending on thickness), pink to medium red inside but the meat will be tender as can be. Ofcoarse this is only for people who like their meat NOT DONE in the middle, cooking to well done this way would probably catch the meat on fire. Anyway, I use garlic powder and salt and pepper only. I think the taste of a steak without so much on it is great. Garlic really brings out the flavor of steak, atleast I think so. Good Luck, Jen

Bronwyn, that is the preferred marinade at my house. Beer works well too.

Marinating with red wine (if you have any left over) overnight is always a good way to tenderize and add a nice, light flavor.

And the number 1 thing to remember serve RARE with salt and black pepper.

Pro tip just because you asked---Let your meat come to room tempature before throwing it on a hot grill. It dont shock the meat. I know it sounds stupid but try it and see if it dont work. Good luck with you grilling.

Use very good quality steaks with plenty of marbling thru the steak .The leaner the steak the tougher it is .Unless you are using filet Mignon (Loin Steak)
T Bone,NY,Chuck Porterhouse are generally pretty tender.Sirloin and top Round is most of the time tougher cuts.and need tenderising

Whitehawk ,,,Fill us in on steak.

I use a liquid tenderizer, like John Boy and Billy's Steak Tenderizer or even their grilling sauce. I then add enough pepsi to cover the meat and let soak for a good 2 hours and cook.

buy filet mignon and you don't have to worry about tenderizing.

i lay my steak on a plate and put my seasoning on both sides of it....then i beat the crap out of it with the open end of it with a drinking glass....then when i cook it let it cook for a few minutes on one side and flip it once and let it cook on the other....over cooking dries them out
