Weight Watchers Strawberry Cake
1 Box Duncan Hines French Vanilla Cake 16 oz Diet Sprite 16 oz bag frozen strawberries (I use 1 pound of fresh when in season) 1/4 cup Splenda 8 oz fat free cool whip
Preheat oven to 350. Mix cake mix and only 12 oz of diet sprite (reserve 4 ozs for later). Pour in 9 x 13 pan sprayed with Pam. Bake until done (according to package). Slice berries, add 4 oz sprite and splenda. Stir well. Cool cake completely. Spread 1/2 cool whip, then strawberries, the rest of cool whip. Keep refrigeragted.
I punched holes in the cake with a fork so the juice from the berries would soak into the cake.
16 servings = 4 pts. 12 servings = 5 pts.

Hey y'all, with all the berries coming in now I thought I'd post two of my favorite recipes!
Strawberry/Pecan Bread
3 cups plain flour 2 cups sugar 3 tsp. cinnamon 1 tsp. salt 1 tsp. baking soda 1 cup oil 1 tsp. vanilla 4 eggs beaten 1 1/2 cups mashed strawberries 1 1/2 cups chopped pecans 1 8 oz. can crushed pineapple, drained (optional)
Preheat oven to 325. Grease and flour three loaf pans. Sift together flour, sugar, cinnamon, salt and baking soda. In separate bowl stir together oil, vanilla, and eggs. Add flour mixture, mix thoroughly. Stir in strawberries, pecans, and if using, pineapple. Pour batter into pans and bake 50 minutes or until tests done with toothpick. Cool in pans 15mins., turn onto racks to cool completely.
Sauteed Strawberries with Cinnamon and Lime
2Tbsp. brown sugar 1 Tbsp. butter 1Tbsp. lime juice 1/4 tsp. cinnamon 1 pint strawberries washed, capped and halved (quartered if large). Should have 2 cups finished berries.
In skillet on med. heat stir together sugar, butter, cinnamon, and lime juice. Cook until mixture is bubbling. Add strawberries and sautee for 2 mins. Remove from heat and serve immediately topped with fresh whipped cream (if desired).
Hope y'all enjoy these as much as my wife and kids do!!!
