just power boil it an fix it like a chicken stew add some flour 4 thicker stew or make it with dumplings also gravy that is the only way to really eat squirrel it is all good if it is fixed right

use any recipe for brunswick stew , substitute the squirrel for the pork or chicken , mmmm, mmmm the original recipe for brunswick stew called for squirrell

the best way i think cut up your squirrel put them in apot and cover with water and boil until tender save your broth to make gravy with roll your meat in flour with salt and pepper to tast fry i wesson oil until golden brown very good

Squirrel Gumbo A traditional Cajun recipe 1 1/2 cups lard 1 tablespoon chopped garlic 1 1/2 cups sifted all-purpose flour 4 cups water 2 cups chopped onions 1/2 cup chopped celery Louisiana hot sauce to taste or 1 teaspoon cayenne pepper 1 cup chopped green bell pepper 1 cup chopped celery 2 cups dry white wine 1 pound andouille or smoked sausage One squirrel, cut into pieces In a large pot, heat the lard over medium heat. Add the flour and stir constantly to make a very dark roux, about the color of mahogany wood. Add the onions, celery, and bell peppers and cook, stirring constantly, until the vegetables are tender. Add the remaining ingredients and cook, covered, until squrriel is tender, about 1 1/2 to 2 hours. Serve over rice.

Squirrel Dumplings This is an excellent way to cook old squirrels which are too tough for frying. 2 dressed squirrels, 2 to 2½ lbs 2½ cups water 1½ tsp salt Dash of black pepper 2 tbsp Parsley Carrots and onions ,Optinal 1/2 stick butter Dumpling Recipe 1 cup sifted self rising flour 1/2 teaspoon salt 1 tablespoon shortening 1 egg 3 or 4 tablespoons milk Mix all together and leave in mixing bowl or roll flat. Wash well inside and out with warm water Cut into serving pieces Put squirrel into a kettle, add water and salt heat to boiling, then reduce heat cover tightly and simmer until very tender, from 2 to 3 hrs the time depending on age of animal The meat should be almost ready to fall from the bones. Remove bones add Meat to broth. Add pepper and 1/2 stick butter Increase the heat until liquid boils Drop the dumplings over the top of squirrel, cover tightly and cook for 12 to 15 minutes. I like the big round dumplings best.

my mon just fried it up like fried chicken...then made gravy with the drippings and put the fried pieces back into the gravy covered and smothered it for about an hour in a deep iron skillet. very good and very tender
