We make this in the spring , bake a whole mchicken and have this dressing on the side .GREAT Zucchini Cornbread Stuffing 1½ cups chopped onion 1 cup chopped celery 1 clove minced garlic 1/2 cup butter or margarine 1/2 cup finely chopped poultry giblets 12 cups coarsely crumbled corn bread 2 cups shredded zucchini, well drained 2 tsp. ground sage 1/2 tsp.black pepper 1/4 tsp.red pepper 2 eggs, beaten 2 tsp. instant chicken bouillon granules Combine first 4 ingredients and cook till tender. Add ham and giblets. Cook till giblets are lightly browned. Combine ham mixture with corn bread, zucchini, seasonings and eggs. Dissolve bouillon in 1½ cups boiling water. Add to mixture. Toss lightly to mix. Makes enough to stuff a 12 lb. turkey. Bake remaining stuffing in 1½ qt. casserole at 350° for 1 hour, or bake all of the stuffing in a 3 qt. casserole for 1½ hours at 350°.

OMG! A new way to prepare the volume of zuchini the 2 plants in our garden are producing. Both these sound great.
"What are we having for supper tonight, Honey?" Fried zuchini and ? Joke of the month.

i boil (or stew) my squash drain it and use it instead of potatoes, add you some flour, an egg and onions... patty it out and fry it up

Zucchini Bites 1 envelope golden onion soup mix 1 1/2 cups shredded zucchini 1 cup shredded swiss cheese 1/4 cup dry bread crumbs 4 Tbsp. grated parmesan cheese 4 eggs 3/4 tsp. basil Pre-heat oven to 325º. In large bowl comgine all indredients. Mix well. Spoon into well greased mini muffin pans. Bake 20 minutes or until golden. Makes 24.

that sounds good
i've made them like tater cakes before, probably taste similar... it's the only way i can get my kids to eat squash

These are simple, and GREAT!
1 Cup of cooked squash (mashed) 1 medium onion chopped 1 Egg 1/3 Cup flour 1/3 Cup Corn Meal salt and pepper to taste
Combine squash, egg, and onion and mix well. Then add in the flour and corn meal. Mix well. Drop by spoonfulls into deepfryer until golden.
