This is a fave at my house:

4 cups of sliced yellow squash

one medium size sweet onion sliced

one sleeve of ritz crackers

one cup of shredded cheddar cheese

1/4cup of melted butter

2 eggs beaten

1 cup milk

in a large pan saute the sqaush and onion until they are tender - not mushy. Add salt and peper to taste then add the eggs and milk stirring well. Let simmer about 15min until most of the liquid is absorped. In a seperate bowl crunch up ritz cracker and mix with shredded cheddar. Add half of this to the squash mix in the pan along with butter. Spread the squash mixture into a 9x13 pan. top with the remaining crumb/cheese mixture dotting with butter. Bake at 350 for 20mins or until brown on top.
