squash casserole.

3 cups squash cooked
1 medium onion
1 stick butter
1/2 bag stuffing mix
1 can cream of chicken soup
1 2 oz. jar pimento's
1 8 oz. container sour cream
salt and pepper to taste


Cook squash and onion together until tender. Drain. Mix them with some of the stuffing mix and then with the remaining ingredients.

Put in a casserole dish and top with remaining stuffing.

Bake at 350 for 35-40 minutes.

Squash Casserole

2 lb. squash, cooked and drained
1 carrot, grated
2 Tbsp. pimento, chopped
1 onion, chopped
1 can cream of chicken soup
1/2 pt. sour cream
1pkg. herb suffing mix
1 stick margarine or butter

Cook squash, season lighly with salt and pepper. Add carrot, onion, pimento, soup. Pour melted butter over stuffing mix and mix well. Add 1/2 stuffing to squash and put in buttered casserole dish. Cover with remaining stuffing mix. Bake at 375 degrees for 25-30 minutes.
