I tried this one at our family reunion....and it was wonderful. I'm growing squash now and plan to replace the cabbage with the squash for the summer.
Cabbage Casserole
Using the full cup of butter will make this a much richer dish.
1 medium head cabbage, washed, drained and shredded
1 small chopped onion
½ to 1 cup melted butter, divided use
1 egg
½ cup mayonnaise
1 can condensed mushroom or cream of chicken soup, undiluted
1 stack of Ritz Crackers, crushed
1 cup shredded cheddar cheese
1. Heat oven to 350 degrees. Place cabbage and onion in a 9-by-13-inch casserole dish, and pour ¼ to ½ cup of the melted butter over cabbage and onion.
2. In a bowl, combine the beaten egg, soup and mayonnaise; mix well. Pour mixture over cabbage and onion.
3. In a separate bowl, combine crushed crackers, remaining melted butter and cheese. Spread mixture on top of the casserole. Bake for 30 minutes.
NOTE: I don't like cream of mushroom soup, so I use either cream of celery or cream of chicken. If I use a lot of cabbage, I add 2 cans of soup....one of each.
