Spaghetti Squash

I have baked them after halving them and I have cut slits in them and boiled them. Both are equally good.
I just serve the "pasta strings" with regular home made spaghetti sauce. Yes, the kids will notice the difference. Mine liked it for the novelty after we hyped the different way to make spaghetti. The fact that they saw them growing and got to help work them and pick them from the garden made them to look forward to the novelty.

Here's what I do: I use one of those shallow baking pans, cut the Spaghetti Squash in half, cut side down in the pan with about an inch of water, poke a couple of knife cuts thru the back of the halves, tent it, bake it and then scoop out the strands.

I tried it in the microwave, cut in half, cut side down but they blew up and made one holy mess.

Yes it's great being diabetic i need a replacement for pasta and it is much healthier. I actually grow my own in my garden. They are more like a pumpkin than a squash. Try them really easy to fix good with garlic shrimp and alfredo sauce I use in any pasta dish it does have a little sweeter taste,

Just curious if anyone has used spaghetti squash in place of pasta? I've seen several spaghetti recipes using spaghetti squash and was wondering if I would trick the kids or if it is noticeably different,
