I'll let you all know how it goes. I'm getting creative in order to make it both healthy and yummy.

Sweet that sounds like a great idea. I love using tortillas in casseroles. I've never tried it in a slow cooker. I love a recipe using tortillas called King Ranch Chicken. A poster on here served it at a cooking get together I was at several years ago and it was really good. If you try out your idea let us know how it goes.

Sweetangelfriend, that sounds good~~~but if I understand, you will be cooking all this in the crock pot [except for the lettuce, tomato, and sour cream~~~use a liner for your crockpot because of the cheese and maybe you would like to scrape a couple of ears of corn or one and a small can of cooked, washed black beans as a layer. This is making me hungry!

Let us know how it turns out.

I have an idea I'm dying to try. I was thinking about taking ground beef and browning it and then making a layered meal using the meat, salsa, cheese, olives and flour tortillas. I'd serve it topped with shredded lettuce and sour cream.

Sweet my favorite, easiest slow cooker recipe that I use is a roast. I add one pack onion soup mix, 12 ounces diet cola or regular cola, beef roast meat and cook that on low for about 8 hours. You can add potatoes and carrots the last couple of hours if you like.

Another easy one is stew beef which is one can cream of chicken soup, one can of mushroom soup and one can water. Add all that to the slow cooker with stew meat and cook for 8 hours on low. Serve over rice or egg noodles.

For a spicier roast you can add a roast to crock pot and then add diced tomatoes with green chiles. Cook 8 hours. Serve over egg noodles or rice. You can also make tacos or burritos if you shred the meat.

I'm trying to get really creative with cooking. Does anyone have any really good slow cooker recipes?
