Simple Glazed Chicken

I'll keep that in mind GoWilkes...What other recipes do you like to spice up with spirits? I've always wanted to make a Midori cake myself. Anyone ever made one?

The trick is, buy the cheap, no name rum for cooking so you won't be tempted! Never, ever use Bacardi for cooking, you'll just end up using the whole bottle before you realize that you forgot to glaze the chicken! :D

GoWilkes, that sounds good but if I decided to get into the rum while cookin' I just might burn the chicken!

Kelly, try adding dark rum instead of lemon juice. I think you'll like it! The alcohol is cooked out pretty quickly, but it still adds a punch of flavor.

Start with a pack of chicken breast tenders.

Here's what I add to the frying pan for the "glaze":
2 Tbsp. soy sauce
3 Tbsp. lemon juice
2 Tbsp. honey (or pancake syrup if you're out of honey works too)
Couple good shakes of oregano, basil, red pepper, black pepper, garlic powder.

Coat all the chicken tenders in the liquid mixture. Cook on medium heat.
As the liquid reduces it creates a tasty glaze to pour over the chicken when plated.
