Of course, you could go traditional and serve Yorkshire pudding.

Smashed new potatoes with goat cheese and roasted garlic would go well, too!

This has been the only correct suggestion. And then also include the green. Asparagus is an OK option. But personally, I think is a better match with a fillet. Mixed vegetables like carrots and green beans (not those over cooked, mush crap that people around here call green beans) I think would be better than asparagus. Prime rib is a strong entree and doesnt need a lot of help. Dont over do it with complex sides.

Always potatoes with prime rib. Those who don't dig potatoes, how about sweet potatoes? Or pasta/steamed broccoli with a light alfredo/ginger sauce? Fried apples. Parkerhouse rolls.

It's a grocery store in Boone, they have some prepared foods, a salad bar and hot food bar.

I'm serving mine with a jus and sour cream with horseradish sauce, roasted chipollinis and sauteed button mushrooms, rainbow carrots, asparagus with hollandaise, and either a Gruyere duchess potato or Parmesan potato pave.
