Shepard's Pie

This is the one I use, kids and adults love it! Served with rolls it is an entire meal! I make to pans- freeze one for later!

2 lbs. hamburger meat
2 lg. cans Sloppy joe sauce or 2 jars spaghetti sauce
1 lb. frozen mixed veggies
2 - 2 lb. pkges. mashed potatoes (these are already made for faster cook time, just heat up) (I cheat here, you could make homemade mashed potatoes)
Cheese- grated

Cook hamburger, drain, mix together meat, frozen veggies, and sauce. Put in 13x9 pan - should fill two pans. Cover w/ mashed potatoes. Place cheese over entire top. Place in oven at 350. It is done when cheese is bubbly!

Skillet Shepherd's Pie
Serves 4 to 6
2 cups cubed cooked chicken (see below)
1 package (16 ounces) frozen mixed vegetables, thawed and drained
1 can (10-3/4 ounces) condensed cream of mushroom soup
1/2 cup milk
1/4 teaspoon onion powder
1/4 teaspoon black pepper
4 cups hot mashed potatoes (see below)
Recipe
In a large skillet, combine all the ingredients except the potatoes over high heat; mix well. Cook for 5 to 8 minutes, or until heated through, stirring frequently. Remove from the heat and dollop with the potatoes. Serve immediately.
MAKE IT EVEN EASIER (?) by using packaged pre-cooked sliced chicken and instant mashed potatoes.

1 pound ground chuck beef
8 ounces mushrooms, chopped
1/2 cup chopped onion
2 large cloves garlic, pressed or finely minced
1 teaspoon kosher salt
Freshly ground pepper to taste
1 Tablespoon Worcestershire sauce
1 Tablespoon flour
1/2 cup beef broth
1/2 cup heavy cream
1/2 cup frozen peas, unthawed
2 cups shredded hash brown potatoes (frozen or deli-packed), packed
1/8 cup chopped chives (or finely sliced green onions with tops)
2 cups finely-shredded cheddar cheese or cheese blend, divided use
1 teaspoon kosher salt
1/4 cup mayonnaise
Sweet Hungarian paprika
PREPARATION:
Preheat oven to 375 F.
Place ground beef, mushrooms, onion, garlic, salt, and pepper in a large heavy skillet.
Saute, breaking up ground beef, until the juices have almost evaporated.
Stir in Worcestershire, then flour. Cook 1 minute, stirring often. Add beef broth, stirring to combine, then heavy cream. Simmer until gravy thickens. Pour into glass baking dish. Let cool slightly, then sprinkle green peas evenly on top of beef.
In a mixing bowl, combine hash brown potatoes, chives, 1 cup of the cheddar cheese, salt, and mayonnaise. Spread evenly on top of beef layer. Spread remaining cup of cheddar cheese on top and sprinkle lightly with paprika.
Bake about 45 minutes until cheese has melted and is slightly browned. Let rest 15 minutes before serving.
Yield: 4 to 6 servings
...Sausage shepherd's pie with sweet potatoes and squash...

Ingredients1 1/2 pounds tan-skinned sweet potatoes,
peeled, cut into 2-inch pieces (about 5 cups)
1 pound butternut squash, peeled, seeded, cut into 2-inch pieces (about 3 cups)
1 medium russet potato, peeled, cut into 2-inch pieces
2 tablespoons (1/4 stick) butter
2 tablespoons pure maple syrup
1 1/2 pounds sweet Italian sausage, casings removed
2 cups chopped onions
1 tablespoon minced garlic
3/4 cup frozen peas
3/4 cup frozen corn kernels
1/3 cup whipping cream
1 large egg, lightly beaten
1 1/2 teaspoons curry powder
1/2 teaspoon ground coriander
6 drops hot pepper sauce
PreparationCook sweet potatoes, squash and russet potato in large saucepan of boiling salted water until tender, about 25 minutes. Drain. Return all potatoes and squash to same saucepan and mash. Stir over medium heat until excess moisture evaporates, about 5 minutes. Add butter and syrup. Season to taste with salt and pepper. Mash mixture until smooth.
Preheat oven to 350°F. Butter 8 x 8 x 2-inch glass baking dish. Cook sausage in large skillet over medium-high heat until sausage is brown and cooked through, breaking up with back of spoon, about 10 minutes. Using slotted spoon, transfer sausage to large bowl; reserve 1 tablespoon of drippings in skillet. Add onions and garlic to skillet and sauté over medium-high heat until onions are tender and golden, about 7 minutes. Add onion mixture to sausage. Season to taste with salt and pepper. Cool. Mix in peas, corn, cream, egg, curry powder, coriander and hot sauce.
Transfer sausage mixture to prepared baking dish. Spoon mashed potato mixture over; smooth top. (Can be prepared 1 day ahead. Cover and refrigerate.) Bake until heated through and potatoes begin to brown around edges, about 45 minutes (or about 1 hour for casserole that has been refrigerated). Let stand 5 minutes before serving.

Shepherd's Pie:
Take 1 lb. of hamburger cook with a onion and drain well.Then add 2 cans of veg-all(drained well) 1 can tomato paste and 1 can of diced tomatoes..(this is kind of like veggie beef soup but thicker) add spices to taste..Fix about 3 cups of mashed potatoes..Put beef mixture in a cassrole dish and cover with potatoes,,Bake at 350* for about 20 min or until potatoes start turning a little brown...
