Bushman posted a sausage roll recipe and it reminded me of scotch eggs.

this is an item i make when i am having a lot of company staying in my house. works good for a brunch or quick breakfast. i have family that comes to charlotte for nascar and such. these can be eaten warm out of the oven or are excellent served chilled. i generally slice them in quarters and dip in a mustard sauce.

all you need is hard boiled eggs and loose ground breakfast sausage. i buy bulk sausage and add bread crumbs almost as if making a "meatloaf"

make a large thin patty of sausage, place a hard boiled egg on top, wrap the sausage around the egg so that is entirely enclosed. line the sausage balls (eggs) on a cookie sheet and bake at 350 for 35-45 minues. until the sausage is cooked.

its a great finger food for kids too
