My Mother worked for the Wilkes School system lunch program .Here is the recipe that was used at CB Eller School.Smaller version for home use.
Schoolhouse Yeast Rolls 1 cup whole milk 1/4 cup sugar 1 tsp salt 1/2 stick margerine 1/2 cup warm water 2 packs Rapid rise yeast----RAPID RISE ONLY 2 eggs 5 1/4 cups regular flour Heat milk,sugar ,salt and marg to 150º !!!! DO NOT OVER HEAT!!!! Set to side to cool to(babt bottle stage).Does not burn wrist when sprinkled on it. Mix flour, yeast ,eggs and water Add to milk amd mix well. Put on floured board and kenead for a few minutes cover with mixing bowl. Wait for 15 minutes then knead again into rolls. Put on a greased sheet pan- spray with pam prior to placing. Cover loosely with plastic wrap for 3 hours. Bake at 375º for approximately 15 minutes.
