mtnview, if you like it spicy add a sprinkle of ground red chili pepper to the mix along with the hot sausage.

Sausage Balls
1 lb. ground sausage, mild or hot to your taste 2 + cups baking mix, such as Bisquick® 1 pkg. (16 oz.) finely shredded cheddar cheese 3 Tbsp. dijon mustard 1/2 finely chopped red onion
Preheat oven to 350º F. Finely chop red onion and place in mixer bowl of stand mixer with paddle attachment. Add sausage, 2 cups of baking mix and cheese. Start mixer on the third speed and allow ingredients to begin to combine. If mixture looks too wet, add a little more baking mix. Add dijon mustard and mix until combined. Flour hands lightly. Make a small, quarter-size, ball of mixture in the palm of your hand. If mixture is too wet, add a little more baking mix until mixture holds together well. After forming balls, place on baking sheet with cake cooling rack placed across it and bake for approximately 20 - 25 minutes. If placing on baking sheet without rack, turn balls over halfway through cooking time. Makes approximately 3 dozen.

2 Rolls of Hot Tennessee Pride Sausage 2 Bags of Kraft Sharp Cheddar Approx. 3C of Bisquik (eyeball it)
Mix all ingredients together with your hands until completely blended. Roll into small balls and bake at 350-375 for 10-18min.

1/2 lb. sausage - crumble and fry until done. Cool 1/4 C. shredded mild cheddar cheese 11/2 C. Bisquick - use only enough milk to make into small balls Bake @ 450 degrees 8-10 min. or until browned

HOT SAUSAGE BALLS
1 lb. hot sausage 10 oz. sharp Cheddar cheese 2 c. Bisquick 10 drops Tabasco 1 tsp. thyme 1/2 tsp. sage
Mix above ingredients and shape into 50 balls. Refrigerate 30 minutes. Bake at 350 degrees for 30 minutes.

Sausage Balls
1 lb sausage (I use hot) (your choosing) 10 oz sharp cheese, grated fine 3 cups Bisquick
Put all together in bowl and mix well. (if you have a good mixer with dough hook, this works well). Roll in bite size balls. Bake 350 for 10 minutes or until brown.
