Brown the roast in a little bit of oil. Season both sides with pepper, season salt (or garlic salt, etc.). After it has browned, add just enough water to cover the bottom of the pot. I add a bay leaf or two. Do not cover the roast with water. Cover and simmer it on low, checking every so often to see if needs a bit more water. After a couple of hours you can add chopped onions, potatoes, carrots, etc. and cook until they are done.
