Rice Pudding

Rice Pudding Like Mama Used to Make

1 1/4 cups cooled, cooked rice
2 eggs
2 cups milk
1 cup raisins
1/2 cup sugar
1/4 tsp salt
1 tsp vanilla
dash ground cinnamon and nutmeg

Cook and cool the rice. Beat eggs until light and thick, and fold in the milk. Lightly mix in the other ingredients. Place in a buttered 1 1/2 quart casserole. Bake in a shallow pan of water at 350 deg. for 1 hour. Yield: 6 servings.

This is a simple recipe, use leftover rice, a can of eagle brand milk, some cinnamon, and milk. Just add the ingrediants and heat it and add milk as needed to make it how thick or thin you want it

My recipe is good and easy but you may think it's too simple. I usually wait until we have rice for dinner and have some left over.

1 small box of vanilla cook and serve pudding
2 handfuls or raisins (or more or less-whatever amount you want)
leftover rice
cinnamon to taste

Cook vanilla pudding according to directions. Throw the raisins into the pot so they plump up a little once the pudding is done. Shake cinnamon onto the surface of the pudding and stir vigorously. Add the rice and you are done.

Does anyone have a great Rice Pudding recipe that they would be willing to share? I would like to make some to treat my Mom for Christmas.
