I usually make a veggie casserole that is constantly requested. It's easy and it goes pretty far.

1 can french cut green beans (or take reg ones and cut into fine strips)

1 can corn

1 can cream of celery soup

1/2 cup onion (I adjust this depending on the strength of the onion)

1/2 cup mayo

1/2 cup MILD cheddar cheese (sharp cheddar really overpowers it!)
8oz sour cream

Just mix everything together and top with crushed ritz crackers (or not - I don't) Bake at 400 for about 30 minutes. You will know it is done when it bubbles around the sides really good.
