Redskin Potatoes

I tried and enjoyed many of these suggestions. Thank you all! I also used Bushman's holly tater mixture from another post with chunks of these potatoes and my house loved them!

I wash and quarter mine and place on a baking sheet with some olive oil and rosemary...bake at 400 for about 30 min.

Wash and quarter them and place in a large freezer bag. Mix with about 1/4 to 1/2 cup oil and 1 packet of hidden valley ranch MIX not the pre-made liquid. Coat in bag then place on baking sheet. Bake at about 375 until soft (about 30 min or so). The ranch and oil makes them moist and tangy but they have a nice crust on them.

like grannynanny said, cut them into 3/4 inch pieces... i add carrots yukon gold potatoes, onions and yellow beets with some chopped (fresh) rosemary and thyme and don't forget the sea salt

i think i did mine at 450 for 30 mins

Grilled Italian-Style Potato Salad
2 lb. unpeeled small red potatoes, halved (about
6 cups)
1/3 cup water
2 cloves garlic, minced
1/4 cup Zesty Italian Dressing, divided
1/4 cup Mayonnaise
4 slices Bacon, crisply cooked,
drained and crumbled
4 green onions, thinly sliced (about 1/2 cup)
PREHEAT grill to medium-high heat. Place
potatoes in 2-qt. microwaveable dish. Add water;
cover with lid. Microwave on HIGH 8 min.; drain.
Add garlic and 2 Tbsp. of the dressing; toss to
coat.
SPRAY large sheet of heavy-duty foil with
cooking spray. Spoon potato mixture onto center
of foil. Bring up foil sides. Double fold top
and ends to seal packet, leaving room for heat
circulation inside.
GRILL 20 min. or until potatoes are tender,
turning packet over after 10 min. Mix mayo and
remaining 2 Tbsp. dressing in large bowl. Add
potatoes, bacon and onions; toss lightly. Serve
warm.
Red Garlic Mashed Potatoes
INGREDIENTS
8 medium red potatoes, cubed
2 teaspoons crushed garlic
1/2 cup butter or margarine
1/4 cup half-and-half cream
2 tablespoons white sugar
1/4 teaspoon steak seasoning
1/4 teaspoon garlic powder
DIRECTIONS
Place the potatoes into a large pot, and fill with enough water to cover.
Add 1 teaspoon of the crushed garlic to the water for flavor.
Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork.
Drain the potatoes, and add the butter. Mash until the butter is melted.
Mix in the half-and-half, sugar, steak seasoning, garlic powder and remaining garlic.
Mix potatoes with an electric mixer until smooth.
Roasted Potatoes with Red Onions
Ingredients
2 lb(s) Small red potatoes
1 Red onion, large
6 Garlic cloves chopped
2 Tbsp Fresh rosemary, chopped
2 Tbsp Olive Oil
2 Tbsp Butter, melted
1 tsp Kosher salt
1/2 tsp Black pepper
Parsley, chopped for sprinkling
as needed Fresh rosemary sprigs
Procedures
Preheat oven to 350 degrees.
Cut potatoes in half.
Cut onions into large pieces.
Add potatoes and onion to large mixing bowl.
Add garlic, rosemary, oil butter, salt and pepper.
Toss to thoroughly coat potatoes and onions with seasonings.
Arrange potatoes and onions on a baking sheet,
in a single layer.
The cut side of the potatoes should be touching the baking pan.
Bake in oven for 25-30 minutes or until potatoes are fork tender.
Garnish with chopped parsley and fresh rosemary sprigs.

Wash, dry and cut into bit size pieces. Place in baking pan. Spray with Pam and sprinkle seasoning salt. Bake at 375 or 400 until done.

I just cut mine up in quarter pieces, with skin, & boil them, not to soft, with butter, and drain them, put more butter & couple tablespoons of mayonaise, or as much as you like, and sprinkle with poppyseeds, & salt & pepper, I use dukes, and the salted butter. try these, my family loves these What really makes them extra super, is sometimes I put a couple pieces of salty ham in, when I'm boiling, this gives them the ole timey taste!! I know these are super fatten, so we don't have these very much!!

This is something I made up Camping!! It was a HIT!!!

potatoe salad with the red potatoes, , I boil whole with skins, put in refrigerator, untill cold, then I cut the potatoes with skin, into big squares, then I take dill pickles, cut them up in squares, not the relish, but the long stem dill pickles, I cut up a purple onion, into squares, my hard boil eggs, into squares, then I use dukes mayonaise, lots of it, and salt & pepper, & dill, This is really a nice change from the regular salad

If you try this let me know how you like these, Maybe to fatten for your taste, but this really is a hit at gatherings.

The produce stand had some baby redskin potatoes today at a decent price. I would love some new recipies for them...
