nshock My mother has several of Faye's recipes. She said to tell you all that she has felt guilty for not being able to get this to you this week due to being computer illiterate. She hasn't learned how to post yet and had to wait on me to do it. So here it is.
Faye's Red Velvet Cake
2 1/2 cups self-rising flour 1 1/2 cups sugar 1 cup Wesson oil 1 teaspoon soda 2 eggs 1 cup buttermilk 1 teaspoon vinegar 1 ounce red food coloring 1 teaspoon vanilla * Note there is NO cocoa in this recipe. Mom said it must not have needed it, but you can add it if you want.
Mix sugar and oil. Add eggs and beat after each addition. Add vinegar. Mix soda with flour, and add alternately with buttermilk. Add vanilla and food coloring. Bake in two eight-inch cake pans at 350 degrees for 25 to 30 minutes.
Icing 8 ounce cream cheese 1 stick margarine 1 box confectioners' sugar 1 teaspoon vanilla 1 cup chopped pecans
Cream together cream cheese and margarine. Add sugar, nuts and vanilla. Mix well.
Mom has other recipes of Faye's if you are looking for anything else. Mom is the recipe queen and I'm typing this while sitting in her office which has a wall of cook books.

Someone posted Faye Runion's red velvet cake on here once. If I can find it I will bump it. Faye made the best cakes.

Ingredients Cake: 2 cups sugar 1/2 pound (2 sticks) butter, at room temperature 2 eggs 2 tablespoons cocoa powder 2 ounces red food coloring 2 1/2 cups cake flour 1 teaspoon salt 1 cup buttermilk 1 teaspoon vanilla extract 1/2 teaspoon baking soda 1 tablespoon vinegar Icing: 1 (8-ounce) package cream cheese 1 stick butter, softened 1 cup melted marshmallows 1 (1-pound) box confectioners' sugar 1 cup shredded coconut 1 cup chopped pecans Directions Preheat oven to 350 degrees F. In a mixing bowl, cream the sugar and butter, beat until light and fluffy. Add the eggs one at a time and mix well after each addition. Mix cocoa and food coloring together and then add to sugar mixture; mix well. Sift together flour and salt. Add flour mixture to the creamed mixture alternately with buttermilk. Blend in vanilla. In a small bowl, combine baking soda and vinegar and add to mixture. Pour batter into 3 (8-inch) round greased and floured pans. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Remove from heat and cool completely before frosting. Icing: Blend cream cheese and butter together in a mixing bowl. Add marshmallows and sugar and blend. Fold in coconut and nuts. Spread between layers and on top and sides of cooled cake.
