Red-Hot Tartar Sauce - 0g Carbs, 0g Fiber, 0g Sugar

1/4 cup peeled, seeded, minced cucumber
2 Tbsp chopped sweet or dill pickle (OR 1 Tbsp of each type)
2 Tbsp minced onion
2 Tbsp minced celery
1 Tbsp minced parsley OR chives
3/4 cup mayonnaise
1 Tbsp fresh lemon juice
1 Tbsp Frank's Red-Hot Sauce OR 1-2 tsp Tabasco Sauce
Salt, to taste
Pinch of white pepper

Put the minced cucumber, pickle, onion and celery in two sheets of
paper towel. Press moisture out of the vegetables as much as you can.
Put mixture in medium bowl. Add the parsley or chives, mayonnaise,
lemon juice, hot sauce or Tabasco, salt and pepper. Stir gently.
Taste for seasoning. Cover the bowl with plastic wrap and put in
the refrigerator for at least an hour.

Serving suggestions: Good on grilled or fried fish, or in fish tacos.

Makes about 20 servings of about 1 tablespoon each

Lighten it up:
Use 3/4 cup low-fat mayonnaise instead of mayonnaise and save
30 calories and 4 g fat per serving.
