Here is a couple to try.

Red-eye Gravy
Add 1 cup black coffee to hot ham grease left from frying out fat
cut off ham. Let this mixture come to a boil. Serve over hot
biscuits.
Ham and Red Eye Gravy
2 slices (8 ounces each) country ham, about 1/4-inch thick
Trim the fat off ham
2 tablespoons butter
1/2 cup strong brewed black coffee
1/3 cup water
In a large skillet, fry the ham fat till rendered.
Save fried fat it's good eating.
Then fry the ham over medium heat until lightly browned.
Remove to a platter.
Add butter to the skillet then the coffee and water.
Boil until reduced by about 1/2, scraping up
browned bits in the bottom of the pan.
Pour over the ham slices and serve as a main dish or
along with a big breakfast, with grits, biscuits, and eggs.
Serves 2 to 4.

well 1st off you need a slice or 2 of ham...
a little sugar
3/4 cup or so of black coffee
just enough grease in the pan to get the ham cooking...
add coffee
and sugar to taste...let cook on med-low heat till you get the consistancy that you want..good over biscuits or taters or grits...Razz
