Cowboy Beans
1/2 pound bacon, lean 1 pound ground beef or chuck, lean 1 onion 1/4 cup green bell peppers, diced (optional) 1 16-ounce can pork and beans 1 16-ounce can kidney beans 1 16-ounce can butter beans 1 8-ounce can lima beans 1 16-ounce can northern beans 1/4 cup brown sugar 1/2 teaspoon dry mustard 1/4 cup molasses or maple syrup 1 bottle barbecue sauce 1/2 teaspoon black pepper
Cut bacon into 1/4" bits; brown in a large skillet. Remove bacon from rendered fat and set aside. In the bacon drippings, saute the onion & pepper until tender. Add the ground meat and brown lightly. Put the meats into the bottom of a crockpot. Add the Pork 'n Beans with the liquid on them. Drain most of the juice off of the remaining cans of beans and add them with the remaining ingredients to the crockpot. Mix all well. Cook on HIGH setting for 1 hour to get well heated through, then lower heat setting to LOW and allow to cook for 5 - 6 hours. Stir from time to time. Check on seasonings and correct if desired. A little more brown sugar or syrup might be desired.

Poppy Seed Chicken
POPPY SEED CHICKEN Printed from COOKS.COM 4 boneless skinless chicken breasts container of sour cream 2 cans of cream of chicken soup 1 pack of ritz crackers poppy seeds butter casserole dish Boil chicken breasts until fully done. Mix sour cream and cream of chicken soup together into mixture. Crumble package of crackers into small pieces. Melt half a stick of butter in the microwave. Preheat oven to 350 degrees.
Chop chicken into large chunks into the casserole dish. Spread sour cream and soup mixuture over chicken, completely covering it. Sprinkle cracker pieces all over the top.
Pour melted butter evenly over crackers. Sprinkle poppy seeds all over.
Bake 30 minutes, until crackers are golden brown.
Serve and enjoy!

King Ranch Casserole
5 to 6 chicken breast (chopped)1 large onion chopped2 cans of mushroom soup2 cans of rotel tomatoes ( you can make it hot or mild)lots of grated cheese (mexican blend is good)tortilla shellscook the chicken breast and chop, mix the mushroom soup and tomatoes together. Layer all the ingredients in a casserole dish,You can add sour cream when serving. My sister did that when she was out and it was gooood!!!!

Poppyseed Chicken is a great casserole. Wilkeshoney also posted a great recipe for King Ranch Casserole. It's kind of a spicy tortilla casserole. Cowboy Beans are a good slow cooker recipe to take. If you are interested in any of these let me know and I will find the recipes and post them.
